Holbox is the rare counter where I ordered everything on instinct and then spent the meal quietly mourning every seafood meal I had eaten before it. The shrimp and scallop aguachile arrives with a brightness that practically slaps the palate awake. It is a perfect balance. The ceviche stays refreshing where lesser versions turn muddy, and the crispy Baja tacos pack so much flavor that I forgot my own name mid-bite. Ingredients this fresh simply do not need theatrics. They need respect, and Holbox gives them exactly that. This place set the bar. Everything else on this list had to climb over it.

Redbird occupies a former cathedral, and the space alone would be worth the visit. But the food rises to meet the architecture. The hamachi crudo arrived bright and balanced, cutting through the afternoon with clean, citrusy precision. Every dish felt thoughtful, executed without ego. Service for our large group was seamless, which should be celebrated as its own miracle. The atmosphere invites you to linger, but it also respects your time. I have eaten in converted churches before. None of them fed me this well. Redbird does not rely on its setting. It earns its own praise, one careful plate at a time.

Guisados is the kind of place I describe to friends with my hands waving and my voice rising. The Chiles Toreados are transcendent, a plate of blistered, tangy heat that I would cross town for. The homemade tortillas are pure magic, soft and warm enough to make me question every tortilla I have ever bought. The pork tacos are absolutely fire, rich and smoky and unapologetic. And the staff? Their warmth rivals the salsa. I have eaten here ten times, and it has hit ten out of ten every single time. That consistency is rarer than a good parking spot in downtown. Go.

Every course was beautiful, memorable, and unique, but the real shock came from the fact that it was gluten and dairy free without tasting like a sacrifice. Perfect pacing, no hovering, just wave after wave of precise, creative cooking. I kept waiting for a misstep. It never came. The meal unfolded like a story I did not want to end. I left full, impressed, and slightly ruined for every other tasting menu in the city. This is the benchmark. I am not sure how to eat anywhere else now.

The Little Door is a lesson in beautiful disappointment. The setting is lovely, all candlelight and old-world romance, but the execution wobbles. The duck confit stood out, rich and deeply satisfying, the kind of dish that makes you forgive earlier flaws. But the mezze platter fell flat, a sad pile of potential that never arrived. Service lacked warmth and care, which stung more because the room promised intimacy. The food is good, but the value is questionable when you factor in the unevenness. I left appreciating the duck and resenting the rest. This is a place for a date, maybe. Just order the duck and lower your expectations.
